You will love this air fryer butternut squash recipe because it is an easy way to have a roasted butternut squash as a great side dish for the holiday season. With almost no meal prep time, it is a fast and healthy way to cook your favorite vegetable. Roasted Butternut Squash goes great with Air Fryer Duck, Lamb Chops, or Whole Roasted Chicken.
Ingredients for Air Fryer Squash
Cubed Butternut squash- peeled, then sliced in half, and then cut squash into bite size cubes Virgin Olive oil- I use Bertolli’s, or you can also use melted better Minced Garlic- or garlic powder Kosher Salt- season with salt to your taste preference Black Pepper
How to Make Air Fry Butternut Squash
Season cooked squash with additional salt and pepper to taste. Garnish with fresh parsley if desired.
Notes:
I make this in a Cosori 5.8 quart air fryer oven with air frying basket. I was able to fit all of the medium butternut squash and cook in one batch. If using a larger squash, cook in two batches so the squash is not too stacked or overlapping while cooking. Because all air fryer are different, cooking times may vary. For additional flavors, you can use any extra seasonings you prefer. For a pinch of heat, add a dash of chili powder and paprika, or for more sweet flavors, add ½ teaspoon of cinnamon and brown sugar, or nutmeg. There are so many extra seasonings you can use.
